How could you pass up a delicious rice paper wrap jam packed with spicy vegan fried rice, chopped veggies dunked in a sweet peanut sauce? I know I couldn’t, hence why while in Santa Monica my mom and I visited Thai Vegan about 5 times.
There are so many great things about this kiosk I don’t know were to begin. Let’s start with the price of food. $5 for two massive wraps or $7 for a platter of Pad Thai; its tough to beat. Next, the location; right on Main street with chairs in the parking lot that allow you to sit and people watch (one of my guilty pleasures). Finally, you can drink coconut water straight from the coconut! This seems to be a common thing in Cali which is awesome but I doubt your ever going to see that here in Canada.
It’s been a week since we’ve left Santa Monica and I’m already feeling withdrawal, so tonight I decided to try and recreate the peanut sauce used in Thai Vegan’s wraps. Here is what I came up with; it turned out almost identical, YAY.
Thai Vegan Recreated Peanut Sauce
- 2 mangoes
- 2 tbsp peanut butter
- 2 dates
- 1 tsp hot chili sauce
- 1-2 tbsp water
- 1 tbsp soy sauce
Blend all in a blender and taste. Make alterations as needed. Makes 2-3 servings.
